211 Coffee - one year in.

We started 211 Coffee in March 2024, inspired largely by the scarecity of expertly roasted cold brew coffee, but also by a love of the flavour profiles afforded by pourover and filter coffee. Having worked with espresso for a number of years, I had become bored with traditional dark roasts which tend to emphasise the charcteristics of the roast rather than highlighting the charactersitcs of the bean.
I had my first pourover coffee at Proud Mary in Collingwood (VIC) and it blew my mind. Finding the perfect balance between body and acidity became an obsession, and over the last year, led to a number of experiements - always working with specialty grade single origin beans.
Simplicity is at the heart of my roasting, which is why filter coffee has been a focus. Distilling the coffee drinking process down to nothing but coffee and water is the best way to judge the quality of those ingredients, and the artistry of the roaster. This is what led me to omni roasting - one profile that could be used for both filter and espresso (even milk). If you have a $10k espresso machine and a $1.5k grinder, omni roasting is a revelation. For everyone else, the results will be varied and probably disappointing.
Today is a turning point for 211 Coffee, where we launch a seasonal espresso blend - lovingly and specially made for home roasters who will be able to enjoy an interesting flavour profile without breaking the bank. Let's see where we go from here.
